Maltese Cuisine

European Cuisines

Cuisine that reflects Maltese history, with strong Italian influences as well as Spanish, French, Provencal and other Mediterranean influences and some later British influence. The islands lie along important trade routes, import most of their foodstuffs and had to cater to the foreign powers who ruled them, which opened the cuisine to outside influences. The traditional Maltese stewed rabbit, stuffat tal-fenek, is often identified as the national dish.
