Nicaraguan Cuisine

Latin American and Caribbean Cuisines

A mixture of Mesoamerican, Chibcha, Spanish, Caribbean and African cooking that differs between the western and eastern halves of the country. Western Nicaraguan food revolves around the Mesoamerican diet of the Chorotega and Nicarao peoples, such as maize, tomatoes, avocados, turkey, squash, beans, chili and chocolate, with potatoes cultivated by the Chibcha and pork and chicken introduced later. Eastern Nicaraguan food consists mostly of seafood and coconut. The national dish of Nicaragua is gallo pinto.
