Vinegret, also called Russian vinaigrette, is a salad from Russian cuisine also popular across other post-Soviet states. It combines diced cooked beets, potatoes and carrots with chopped onions, along with sauerkraut or brined pickles, and sometimes green peas or beans. The name comes from vinaigrette dressing, though modern versions often skip vinegar in favor of sunflower or another vegetable oil, or use pickle or sauerkraut brine for flavor. Mixed vegetable salads were adopted into the region's cooking from Western Europe as late as the nineteenth century; the term vinegret originally described any diced, vinegar-dressed vegetable mixture before narrowing to salads built around beetroot. Vinegret appears alongside Olivier salad and dressed herring as a zakuska, or appetizer, on festive tables across Russian-speaking communities.
