Erbswurst

Soups and Broths

Erbswurst is one of the oldest industrially produced instant foods, developed as a way to prepare pea soup without lengthy cooking. Rather than being a true sausage, it consists of pre-portioned tablets of dried, ground pea concentrate packaged inside an aluminum-coated paper roll shaped like a sausage. A creamy pea soup can be made quickly by crushing the tablets, dissolving them in cold water, and boiling the mixture for a few minutes.
