FAQs

Why is cacio e pepe linked to shepherds?

The Pasta Project, a food site, passes on an account from Italian food historians: when shepherds stayed out with their flocks or moved them to different grazing areas, they carried dried foods to sustain themselves, and those foods included dried tomatoes, dried pork cheek, cacio cheese (pecorino Romano), peppercorns and dried homemade pasta. This is the source's account of where the dish comes from, and it names no date and no person.
