Pani ca meusa, literally 'bread with spleen,' is a Sicilian street food typical of Palermo, known in Italian as panino con la milza. It consists of soft bread topped with sesame and stuffed with chopped veal lung and spleen that have been boiled and then fried in lard, sometimes with caciocavallo or ricotta added, in which case it is called maritatu rather than schettu. It was created by Jewish butchers in Palermo and is still sold mainly by street vendors in the city's markets, such as the Vucciria and the Ballaro.
