Knife-Cut Noodles

Noodle and Dumpling Dishes

Knife-cut noodles, also known as knife-sliced or knife-shaved noodles, are a type of noodle in Chinese cuisine most often associated with Shanxi province. Unlike pulled noodles, they are made by thinly cutting a block of dough directly into boiling water, producing noodles that are ribbon-shaped, fairly thick and chewy once cooked; among the knife-cut noodle variations found in Shanxi, the style from Datong is the most famous.
