Larb

Salads

Laab, also spelled larb, laap, larp, or lahb, is a minced meat salad in Lao cuisine known for its bold and harmonious flavors, often accompanied by sticky rice and green papaya salad. It contains minced meat, often pork, chicken, beef, duck, or fish, seasoned with lime juice, fish sauce, roasted ground rice, and fresh herbs such as mint, with chili often added for heat; it originated in Laos and is integral to Lao cultural and celebratory meals, and it has influenced the cuisines of neighboring northeastern and northern Thailand as well as Shan State in Myanmar and Yunnan province in China, though its roots remain distinctly Lao.
