Where did loco moco come from and how did it get its name?
In National Geographic's telling, loco moco began in 1949 at the Lincoln Grill in Hilo, and moco was added because it rhymed.
National Geographic tells the story this way. The ingredients converged in 1949 at the Lincoln Grill in Hilo, on the Big Island, an after-school hangout for local teens. As the story goes, owners Richard and Nancy Inouye assembled an off-menu adaptation of the plantation plate lunch, pairing rice and beef with housemade gravy and an egg instead of macaroni salad. The regulars gave the meal its name: loco, in honor of a teen nicknamed Crazy (loco means crazy in Spanish), and moco, just because it rhymed.
