A pupusa is a thick griddle cake or flatbread from El Salvador and Honduras, made from cornmeal or rice flour and stuffed with fillings such as cheese, refried beans, chicharron or squash. El Salvador holds pre-Columbian roots in the dish and was recognized by the World Trade Organization in 2018 with a denominacion de origen, a designation of origin, after Honduran negotiators ceded the claim during 2003 CAFTA-DR talks; the earliest documented mention dates to 1837, recorded by the Guatemalan poet José Batres Montúfar. The handmade maize or rice dough is stuffed, shaped and cooked on a griddle called a comal, then traditionally eaten by hand alongside curtido, a spicy pickled cabbage slaw, and tomato sauce. El Salvador declared the pupusa its national dish in 2005 and marks a National Pupusa Day each second Sunday in November.

Can a pupusa be made with rice flour instead of corn?
Yes. A pupusa de arroz uses rice flour and is traditional in Olocuilta.
Yes. Pupusas are usually made from white cornmeal and water, but a version called a pupusa de arroz is made from rice flour instead. CooksInfo says rice flour pupusas have a plainer taste but brown up more and get crunchier, and that they are stuffed with refried beans and cheese. They cost slightly more, and they are traditional in Olocuilta, El Salvador.
