Osmanthus cake

Osmanthus cake is a traditional Chinese pastry made from glutinous rice flour, honey, sweet osmanthus flowers and rock sugar, associated with the city of Xindu and traced to the Ming dynasty. Essential oils are extracted from the osmanthus flowers and strained over sugar before being combined with the glutinous rice flour and set into a crystal clear, soft and waxy confection. Tradition credits the technique to a Ming dynasty peddler named Liu Jixiang.
