Ravitoto

Stews, Braises and Sauced Dishes

Ravitoto is a traditional dish in Malagasy cuisine whose name means crushed cassava leaves. Sweet cassava leaves are pounded with a mortar or a meat grinder, then cooked with garlic and very fatty pork. In other societies the same cassava leaves are cooked with coconut milk instead, as in mataba in the Comoros, and dried fish or small shrimp called tsivaki can be added.
