Shebakia

Breads, Flatbreads and Savory Pastries

Shebakia, also called chebakia, griwech or griouech, is a Maghrebi sweet pastry made from strips of dough rolled into a rose shape, deep-fried until golden, then coated in a honey and orange blossom water syrup and sprinkled with sesame seeds. The dough is flavored with yeast, anise, cinnamon and saffron, and mixed with ground sesame before being shaped and fried. It is especially associated with Ramadan and other religious celebrations, when it is produced in large batches and often paired with coffee, tea or the spicy soup harira.
