Shkmeruli is a traditional Georgian dish of fried chicken cooked in garlic sauce, named for the village of Shkmeri in the Oni district of the Racha region where it originated. The chicken is cooked over low heat in the garlic sauce for twenty to twenty five minutes and is typically served with bread. Some versions add the Georgian spice blend utskho suneli, Svan salt or the condiment ajika, and milk was incorporated into the recipe as it spread through other Georgian regions.
