Vaho, also spelled baho, is a traditional Nicaraguan dish made from a mix of meat, green plantains and yuca cooked in and served on banana leaves. It is said to have come from the mixing of the indigenous, mestizo and Afro-Nicaraguan cultures of the country. The meat is typically beef brisket, and the dish needs long cooking. It is served with ensalada de repollo, a cabbage and tomato salad made with vinegar and lemon or lime juice, which tops the meat, yuca and plantains. For some families it is a traditional Sunday dish, and it is also served in many restaurants. Because the name is pronounced differently in Nicaraguan Spanish and some other dialects, there is some disagreement over whether it should be written vaho, baho, vajo or bajo.
