Yassa is a spicy Senegalese dish of poultry, fish or lamb marinated in onions, lemon or mustard and then stewed. Its name reflects both the marinating and stewing technique it describes and the Wolof word for chicken, guinar, and it is especially associated with the Casamance region of Senegal while remaining popular throughout West Africa.
