Chaas

Dairy-Based and Fermented Milk Beverages

Chaas, also known as spiced buttermilk, is a savory drink from the Indian subcontinent made by diluting yogurt with water and churning or blending it into a thin, tangy drink, commonly seasoned with roasted cumin, salt, mint and sometimes ginger, curry leaves or green chili. It is deeply rooted in South Asian home cooking, traditionally made in households as a way to use surplus yogurt and served chilled, especially during the hot summer months, as a cooling accompaniment to meals. Chaas is closely related to other South Asian yogurt drinks such as the sweeter lassi, but is distinguished by its savory, spiced, more thinly diluted character.
