Cauliflower is a vegetable in the same species as cabbage, broccoli, Brussels sprouts and kale, part of the mustard and cabbage family, whose edible portion is its dense head of undeveloped flower buds known as the curd, usually white but sometimes green, orange or purple; several cultivars exist, including the Romanesco variety, whose spiral curds grow in fractal patterns. Cauliflower was domesticated in the Mediterranean region during antiquity, most likely through selective breeding of wild cabbage, and it is now grown worldwide as a cool-season crop, eaten raw, steamed, roasted or incorporated into other dishes.
