Cavatappi is a helical, ridged pasta tube resembling a short corkscrew, with one to three spiral turns, distinguished from the solid twist of fusilli by its hollow tube shape. It was created by accident in the 1970s at an Italian pasta factory when a die meant to cut straight tubes was mistakenly grooved into a spiral; the maker's own trademarked version carries a different brand name, and cavatappi, meaning corkscrew in Italian, became the generic term other producers adopted. Its ridges and tubular shape make it well suited to tomato-based sauces, salads, soups, and baked casseroles. In North America it is sometimes nicknamed scoobi doo pasta for its resemblance to a coiled string toy.
