Chermoula is a marinade and relish used in Algerian, Libyan, Moroccan and Tunisian cooking, its name coming from Berber tacermult or tacermilt and Arabic. It is traditionally used to flavor fish or seafood, though it can also season other meats or vegetables, and is somewhat similar to the Latin American sauce chimichurri. Its basic ingredients are garlic, cumin, coriander, oil, lemon juice and salt, with regional versions adding preserved lemon, onion, chili peppers, black pepper, saffron or various herbs, giving each Maghrebi region its own distinct version built on the same core.
