Chimichurri

Condiments, Sauces and Fermented Flavorings

Chimichurri is an uncooked sauce used both as a cooking ingredient and as a table condiment for grilled meat, combining finely chopped flat-leaf parsley, minced garlic, olive oil, oregano, chili peppers and red wine vinegar or lemon juice. It originated in Argentina and is used across Argentinian, Uruguayan, Paraguayan and Brazilian cuisine, having spread more broadly through Latin America. It comes in two main forms, the green chimichurri verde and the red chimichurri rojo, and remains closely associated with grilled meat and regional food identity across South America.
