Colby cheese is a semi-hard American cow milk cheese first made in 1885 near Colby, Wisconsin, from which it takes its name. It is produced by a washed-curd process similar to cheddar but is not pressed as firmly and is not aged as long, giving it a softer texture, milder flavor and more open, moist consistency than cheddar. Colby is often blended with Monterey Jack to produce the marbled cheese known as Colby-Jack.
