Comte, also known as Gruyere de Comte, is a hard cheese made from unpasteurized cow's milk in eastern France. It is the leading cheese by volume among all French cheeses carrying Protected Designation of Origin status, reflecting both its popularity and the scale of its production in the Jura and surrounding Alpine region. The cheese has the firm texture typical of aged mountain cheeses.

Carries Allergen
Entity-backed identity for the allergen value this ingredient already carries as an enum fact, resolved to a ingredient entity by an explicit value-to-entity map (phase 3 bucket conversion, docs\design_entity_backed_browse_buckets_20260928.md). The enum fact itself stays on the entity unchanged.
