Conchiglie is a type of pasta shaped like a shell, usually sold in the plain durum wheat variety as well as colored varieties made with natural pigments such as tomato extract, squid ink or spinach extract. Its shell shape helps sauce cling to it, and it also comes in a larger form called conchiglioni and a miniature form called conchigliette.
