Demerara sugar is a natural brown sugar, amber in color and 97 to 99 percent pure sucrose, made like turbinado sugar from crystallized, partially evaporated sugarcane juice that has been spun in a centrifuge to remove part of its molasses. The centrifuging leaves it less refined than white sugar, so it keeps natural moisture and a light molasses flavor together with coarse, golden crystals. Modern brown sugars of this kind, despite marketing that presents them as unprocessed, still undergo real refining, including partial caramelization from the slow cooking of raw cane juice.
