Goat milk is milk produced by domestic goats, distinguished from cow milk by smaller fat globules, a different protein profile and a more tangy flavor and aroma, which some drinkers find more digestible than cow milk. It is consumed directly as a beverage in many parts of the world and is the base for a wide range of goat cheeses, including chevre. Goat milk has been used by humans for thousands of years and remains an important dairy source in regions of the Middle East, Africa and Mediterranean Europe where goats are more commonly kept than dairy cattle.
