Gorgonzola

Gorgonzola is an Italian blue cheese made from unskimmed cow's milk, taking its name from the town of Gorgonzola near Milan in the Lombardy region where it is traditionally associated. The cheese is inoculated with Penicillium mold cultures that develop into the characteristic blue-green veins running through its pale interior as it ages. It is produced in two principal styles, Gorgonzola dolce, aged briefly for a mild, creamy, spreadable texture, and Gorgonzola piccante, aged longer for a firmer body and a sharper, more pungent flavor.
