Mojo Sauce

Condiments, Sauces and Fermented Flavorings

Mojo is the name, or abbreviated name, of several sauces originating in the Canary Islands, varying in spiciness and consisting primarily of olive oil, local pepper varieties, garlic, paprika, and cumin or coriander among other spices. The main Canary Islands varieties are green mojo, red mojo and spicy red mojo, and other countries have developed similar recipes using acidic ingredients such as vinegar, lemon, orange or lime juice.
