Penne is a short, tubular pasta with diagonally cut ends, its name taken from the Italian word for pen or quill because the angled cut resembles a nib. It is made from durum wheat semolina and produced in both a smooth style, penne lisce, and a ridged style, penne rigate, the ridges helping sauce cling to the surface. Penne is well suited to thick, chunky sauces and baked pasta dishes, and is a staple of Italian and Italian American cooking.
