Rotini

Cereal Grains, Pseudocereals and Pasta

Rotini is the North American name for the corkscrew-shaped pasta known in Italy as fusilli, formed by winding strands of dough into a tight spiral. The shape originated in southern Italy and is often linked to Arab-influenced pasta-making methods that used a thin reed to wind the dough. Its ridged, helical form is prized for how well it traps sauce, especially chunky vegetable or meat sauces, and it appears widely in pasta salads. Regional Italian versions are known by many other names, including busiata in Sicily and fusilli di Gragnano in Campania.
