Split peas are the dried, peeled and split seeds of Pisum sativum, the pea plant, sold in green and yellow varieties; whole dried peas are harvested, dried, stripped of their dull outer skin and then split along their natural cotyledon division, either by hand or mechanically. Per 100 grams, raw dried split peas provide 25 grams of protein, 1 gram of fat and 26 grams of fiber, 104 percent of the daily value on a 2,000 calorie diet, and they are most often cooked into soup or pease pudding, appearing in Iranian khoresh gheymeh, Indian dals, Caribbean cooking, Dutch erwtensoep, Greek fava and Moroccan Berber soups, and are also processed into pea-based plant milk and cheese alternatives.
