Stilton is an English cheese made from pasteurized cow's milk, produced in both a blue-veined form, using Penicillium roqueforti, and a less common white, unveined form. Its name and protected designation of origin restrict legal production to the counties of Derbyshire, Leicestershire and Nottinghamshire, even though the cheese takes its name from the village of Stilton in Cambridgeshire, where it was historically sold to travelers on the Great North Road rather than actually made. Blue Stilton has a firm, crumbly interior with a rich, tangy, slightly sharp flavor, and it is traditionally served at the end of a meal, often with port, particularly around Christmas in Britain.
