Tagliatelle is a traditional type of pasta from the Italian regions of Emilia-Romagna and Marche, cut into long, flat ribbons similar in shape to fettuccine and traditionally about six millimeters wide. It is served with a variety of sauces, though the classic pairing is a meat sauce or Bolognese sauce.
