Teriyaki sauce is a Japanese glaze made from soy sauce, mirin, sugar and sometimes sake, used to marinate and coat grilled or broiled meat, poultry and fish. Its name combines teri, the shine the sugar content gives the glazed food, and yaki, meaning grilled or broiled, describing both the sauce and the cooking technique it was originally paired with. The sauce spread internationally through Japanese immigrant cooking, especially in Hawaii, where local variations often add pineapple juice, and it has since become one of the most widely recognized Japanese flavors outside Japan, sold as a bottled condiment in supermarkets worldwide.
