Toum

Condiments, Sauces and Fermented Flavorings

Toum, also known as toumiya or salsat toum, is a garlic sauce common to the Levant, similar to Provencal aioli. A common version combines garlic, salt, and olive or vegetable oil with lemon juice, traditionally crushed together with a wooden mortar and pestle, and a popular Lebanese variation called zeit wa toum adds mint.
