Za'atar is a Middle Eastern spice blend, most closely associated with Levantine cuisine, typically combining dried thyme, oregano or marjoram with toasted sesame seeds, ground sumac and salt. The name also refers to the wild herb itself, a member of the thyme and oregano family, from which the blend traditionally takes its base flavor. Za'atar is commonly mixed with olive oil and spread on flatbread, sprinkled over labneh, hummus and vegetables, or used as a dry rub for meat and fish.
