Lamb

Meat and Poultry Products

Lamb and mutton, collectively called sheep meat, is meat from the domestic sheep, generally divided into three types: lamb, from sheep in their first year, hogget, from sheep in their second, and mutton, from older sheep, a name derived from the French word for sheep. Lamb is the most expensive of the three and in recent decades has increasingly been the only type retailed under any name, sometimes stretching the traditional distinctions, while the stronger-tasting mutton has become hard to find in many areas despite efforts such as the Mutton Renaissance Campaign in the United Kingdom; in Australia, the term prime lamb is often used for lambs raised specifically for meat.
