Iekei ramen is a variety of Japanese ramen defined by a broth combining pork marrow with soy sauce and by thick, straight noodles rather than the curly noodles used in many other ramen styles. It was first created in Yokohama by the ramen shop Yoshimura-ya in 1974, and the style has since spread internationally, including to Canada, where restaurants such as Ramen Arashi have popularized Yokohama-style iekei ramen across several locations in Alberta and British Columbia.
