A coulibiac is a type of Russian pirog, a baked pie, usually filled with salmon or sturgeon along with rice or buckwheat, hard-boiled eggs, mushrooms, onions and dill. The filling is wrapped and baked inside a pastry shell, most often made of brioche or puff pastry.
