Tlayuda, sometimes spelled clayuda, is a handmade dish of traditional Oaxacan cuisine in Mexico, consisting of a large, thin, crunchy tortilla, partially fried or toasted, covered with a spread of refried beans, asiento, lettuce or cabbage, avocado, meat, Oaxaca cheese and salsa.
