Okinawa soba is a type of noodle produced in Okinawa Prefecture, Japan, and is a regional collective trademark of the Okinawa Noodle Manufacturing Co-op. On Okinawa the dish is often simply called soba, even though the term typically refers to buckwheat noodles on mainland Japan; the noodles of Okinawa soba are instead made from wheat flour and contain no buckwheat at all.
