The cuisine of Hawaii incorporates five distinct styles of food that reflect the settlement and immigration history of the islands, primarily Polynesian, North American and East Asian cooking. In the pre-contact period Polynesian voyagers brought plants and animals, and Native Hawaiians fished, raised taro for poi, planted coconuts, sugarcane, sweet potatoes and yams, and cooked meat and fish in earth ovens. After 1778 missionaries and whalers introduced New England cooking and salted fish that became lomi-lomi salmon, and plantation labor from China, Korea, Japan, the Philippines, Puerto Rico and Portugal produced a local food style that includes the plate lunch, Spam musubi and loco moco.
