Louisiana Creole Cuisine

Louisiana Creole cuisine is a style of cooking that originated in Louisiana, in the United States, blending West African, French, Spanish and Native American influences with the general cuisine of the American South. It revolves around the influences of populations present in Louisiana before its sale to the United States in the Louisiana Purchase of 1803. The word Creole described the French and Spanish descendants in French colonial Louisiana and over the years grew to include Acadians, Germans, Caribbeans and native-born people of African and mixed ancestry. Rice became the predominant starch, and gumbo, whose name comes from the French word for okra, is a signature dish.
