Cabeza guateada, also called guatiada or hueateada, is a traditional cooking method of northeastern Argentina and Paraguay in which a whole beef head is roasted in an earth oven. It is a countryside preparation made on special occasions, particularly among the Gauchos of the Argentine provinces of Catamarca, Salta, Tucuman and Jujuy, and comparable earth oven preparations of a cow head exist in Mexico as barbacoa de cabeza and in Brazil as berarubu.
