Churrascaria

Regional and Traditional Cooking Techniques

A churrascaria is a restaurant that cooks meat in the churrasco style, a Portuguese term that translates roughly as barbecue. Churrascaria cuisine is typically, though not always, served rodizio style, in which roving waiters carry large skewers of barbecued meats table to table and carve portions directly onto the plates of seated diners. The person who prepares churrasco style food is called a churrasqueiro, and the grill used for the cooking is a churrasqueira.
