Mongolian barbecue is a method of preparing stir-fried noodle dishes that, despite its name, is not Mongolian in origin or influenced by Mongolian cuisine; it was developed in Taiwan by a mainland Chinese emigre during the 1950s. Rather than being cooked on a perforated grill above the smoke of an open flame like traditional barbecue, the food is cooked on a large, specialized flatiron grill, a circular cooking surface that more closely resembles a teppanyaki griddle than conventional barbecue equipment.
