Chimney Starter

Regional and Traditional Cooking Techniques

A chimney starter, also called a charcoal chimney, is a device for igniting charcoal lumps or briquettes, consisting of a metal tube with an internal grate that holds the charcoal above a base that allows air to circulate. Modern commercial versions are typically steel cylinders roughly six to eight inches in diameter and eight to twelve and a half inches tall, with a flat or conical grate positioned a few inches from the bottom and large air openings at the base, and many include an insulated handle for safe handling.
