A salteña is a Bolivian baked empanada, a type of savory turnover filled with beef, pork or chicken mixed into a sweet, slightly spicy sauce containing aji pepper, potato and sometimes egg. Its filling is a juicy, gelatin based stew that is liquid when assembled but solidifies once baked inside a pastry shell that is hard and slightly sweet rather than typical of other empanadas, and it is sold throughout Bolivia, especially in the morning, with the cities of Cochabamba, Sucre and Potosi each known for their own version.
