Rengginang is an Indonesian rice cracker made from cooked glutinous sticky rice seasoned with spices, distinguished from many other crackers by keeping the visible shape of the individual rice grains rather than being ground into a paste. The seasoned rice is formed into flat, rounded shapes and sun-dried, then deep-fried in plenty of oil until crisp. It originates with Sundanese cuisine in West Java and Banten, and comes in both sweet versions made with thick liquefied coconut sugar and savory versions flavored with dried prawn, terasi, shrimp paste, or lorjuk, razor clam.
