Cou-cou

Rice, Grain and Starch Dishes

Cou-cou, also called coo-coo or fungee, is part of the national dishes of Antigua and Barbuda, Barbados, and the British and U.S. Virgin Islands, made mainly from cornmeal and okra. Both ingredients are inexpensive and widely available, which made the dish common among many residents during Barbados's early colonial history. Related dishes made from cornmeal or maize flour appear elsewhere in the African diaspora, including funge in Angola and banku, eaten with okra stew and fish, among the Ga people of Accra in Ghana.
